I'm late in posting but will add my comments. The second recipe you shared is the Nestle Tollhouse Cookie recipe. That is the one I use all the time. However, instead of two sticks of butter, I use one stick of butter (softened but not melted) and one stick (1/2 cup) of shortening. They will not spread as much when you use some shortening. Do not use margarine or any type of whipped butter or margarine. They will flatten out way too much.
Be sure to follow the method on the bag- cream the butter/shortening with the sugars well and then cream in the eggs.
I do not bake them at 375 like the recipe says, but in a slightly cooler oven (350-360 degrees). I also use an AirBake insulated pan so they don't get so brown on the bottom.
I bake them for the minimum time given on the recipe, then let them sit a minute or two on the pan when I take them out of the oven. That way they set up but do not get overbaked. Then I remove them to a wire rack to finish cooling.
I've made this recipe for years with very good results.
