SE Nebraska | Here's my recipe. I think the shortening makes them more chewy. When I bake them, I put both oven racks towards the center. I put 1 pan in for 4 minutes on the lower right rack. Then switch it to the upper left & put another pan in its place. Take first pan out after another 4 minutes (8 total). Continue the process until all cookies are baked. Only have to set one timer, just repeat.
I run 3 pans so the fresh cookies can cool for a bit before I put them on paper towels. I also cool the pan under running water before refilling so the cookie dough doesn't melt.
