Greene County Il. | My wife uses the Tollhouse recipe, but she uses kosher salt instead of table salt. She also takes them out at 8 minutes and the residual heat finishes them off. Perfect chew. We think it makes a difference,and others have told us that too. Seems to have more of a depth of flavor. Not overly sweet, a touch savory.She uses salted butter. Unsalted changes the way it interacts with the baking soda,sp it would affect the rise. | |
