IIRC a 40 gal tank has a ~10 gal draw down. I can ask my BIL/nephew for certain in a couple of days (they are licensed well drillers).

As mentioned bigger is more expensive, but there is nothing wrong with having more than one (as long as they are pressurized the same). The closer to the end use the better, is my understanding. So, you could put 4 smaller ones, one at each fountain if they are spaced out.

The burying part IDK.
