Is the end of the old ceiling sheet screwed to anything where it meets the LVL? In other words, did you screw a 2x4 on the LVL to screw the sheet rock too? If not you need to. Ceilings go up first and wall sheets go on under them to help hold them from eventually sagging between joists/trusses.
