I think its because the bulk tank is as fresh as you can get, and the milk will not pick up any "flavors" from stainless steel
thats why people talk fondly of the milkman bringing milk in glass bottles

I can tell you for fact that milk out of a bulk tank that is 36 degrees or less within 35 minutes or less after the warm last milk is put in, WILL tastes better/fresher/ brought into the house ice cold in a gallon pitcher and placed in the fridge than a pitcher full of warm milk taken directly out of the cows and also taken into the house and put in the fridge to cool. The same milking. Just not cooled off as fast.
