Are you sure that isn't where the improved taste comes from, it being unseperated, unhomogenized, not that it isn't pasteurized?.
All of the above. When I said straight from the cow, straight from the bulk tank would be more accurate. The better taste comes from the milk being the most natural state possible without any processing. Jersey milk being high in butterfat and protein are a plus as well. Surely the taste degrades with time. When you buy milk from the grocery, how many days has it been since it came out of the cow? I prefer it cold, but I've drank milk so fresh it was still warm. Light or maybe just light from fluorescent bulbs degrades the taste. So milk in the cooler at the store in plastic jugs is losing its good taste. I remember 1 gallon cardboard milk cartons in the grocery.
