We have used an induction range for a couple years now. The pearl clutching about pots and pans not being compatible is over wrought in my opinion. Aluminum will not work. Any material that a magnet sticks to is good. It is a learning curve for sure but,boiling a quart of water in 90 seconds is pretty impressive. No cooked on food is a plus. The oven in our range has a water vapor system that puts a good crust on home made bread, but is not a feature of induction of course. No heat generated. Many restaurants re switching over as they get really hot during dinner hours. There are haters….as there are with EVERYTHING these days, but we like ours a lot.
