Not much help for your decision - but a couple of comments.

Wife considered conduction but decided it would limit her on what pans she could use for frying and decided against it, right or wrong.

Bacon - wife almost never fries bacon any more. Only if she is out of bacon grease and she needs a little to fry the eggs at that time. She puts it on a baking sheet (like for cookies) and bakes it. Think she lays a mesh rack on top but not sure (to keep it from curling up). Comes out excellent and she drains any excess grease off and saves it.

We eat lots of bacon though. She does a whole package at a time. Then just reheat it as she needs it for other than current consumption.
