Olsen Fish Company in Minneapolis is a reputable company in MN that sells lutefisk. They have a website with a number you could contact. Here is the website link:

I see that they sell Olsen lutefisk at Pike's Market in Seattle. It is twice the price as it is here in MN, but looks like it is available. If you contacted Olsen Fish Company, they may be able to tell you where a source closer to your location in Oregon may be. Or maybe they can ship it to you with dry ice.

Good luck! Get a good product and don't overcook it! I only need to eat it at Christmas time, but do enjoy it once a year.
Your question about "variations" in serving it- boiled or baked. Then served with either melted butter or cream sauce. My grandpa used to roll it up in his lefse along with the mashed potatoes. That's not the way I eat but is a variation!
