Subject: RE: I want or need to roast sirloin in the oven

Pittsburg, Kansas

We used to go to another couples house to visit and eat dinner and he would always cook the steaks in the oven with the broiler element (top heating element). I don't remember all the specifics but as I recall he preheated the over to a rather hot temperature, turned the broiler element on, put the steaks in, cracked the oven door open and left it open to the first notch where there is a couple inch gap in the door, then carefully watched the steaks (through the cracked oven door) similar to what a person might do watching a grill. Did not over cook them but seared them on one side then flipped over and seared the other side using the broiler element only. They always turned out good. He did this at any time of the year.

Basically used the oven as a grill.
