gnucash is free, runs on your desktop, and a big step up from excel and paper. 100% open source with no telemetry. A few hours reading the tutorial and concept guide and you should be good to go.
If you want even more flexibiity that Gnucash offers - - - - look into Ledger-cli .
You can actually connect (I haven't done but have read about it) the two.
I love the flexibility in Ledger-cli - - - I use 10 digit account numbers (!).
(Have been using it for about 8 or 9 years now too!)
