All of the cuts I don't care for get ground up. We eat lots of ground pork (works great to mix 50/50 with 80% ground beef) and have a bunch of it made into Italian sausage that tastes great in any kind of Italian/pasta/spaghetti type of meal.
Basically I get bone in chops, roasts, bacon, ribs & ground pork/sausage.
