I find the premixed breading is really salty, so I just add about 1/3 more corn meal to the mix its about right for me. One thing you want to do for catfish is to cut all the yellow meat off , and yes you throw a lot of meat away sometimes. Another thing is to coat with yellow mustard a few hours before you fry. I use any vegetable oil . fry some onion rings while you got the grease hot.
